As a follow up to my last post about eggs, I thought I’d share one of my quick and easy recipes. I have 3 rules for any good recipe – it has to be fast, healthy and simple (i.e it doesn’t require 20 obscure ingredients I’ll never use again). This one takes 5 minutes to cook and can be eaten at breakfast, lunch or dinner!
Ingredients: Eggs, grated cheddar cheese, roasted red peppers, flour tortillas, fresh basil
Directions: Scramble 2-3 eggs (certified humane or locally raised) in a pan. Sprinkle some cheddar cheese on top to let it melt on the eggs. In the meantime, microwave a flour tortilla for 30 seconds. Put the egg/cheese on the tortilla. Top with chopped roasted red peppers and fresh basil. Wrap it up like a burrito!
